White Dove and Classic Gray, which is perfect in my sky-lit areas, is yellow beigey in my kitchen. Crossing fingers and purchasing sample pots tomorrow. You didn't specify what you didn't like about classic gray, but I am guessing it felt a bit flat.
It has been known to go pink or purple if it is paired with yellows, but you only have blue and purple undertones, so I think you may be okay.
An option that I didn't see anyone else suggest is sticking with Pure White. If it is glossy or satin on your trim and cabinets you could do an eggshell or flat on the walls and it will appear to be darker than the trim and cabinets.
Another option is to pick either blue gray or taupe and change one of the two colors you have already selected. I would also advise you to paint your samples on watercolor paper and look at them one at a time on the wall. If you paint them on the wall your mind automatically compares any of the colors that are in your field of vision and you are not accurately assessing the single color that will end up being on your wall.
I like the 18x24 for whites and neutrals so the sample is large enough to see the undertones. I also highly recommend viewing your color samples outside at about in the afternoon on a clear day.
Take the flooring, counter top, cabinets and all your paint samples and see what looks good in full spectrum daylight. You can clearly see the purple undertones in both flooring samples, but I have no yellow beige, and a fair amount of reds and purples in my decor, so in my home they appear more neutral.
I understand all the color info but to make it easier for you as mentioned earlier you will need to wait until you have the floors exposed, furniture in etc to truly assess your options. So a white for now, and change later IF you need it. Just a thought. Just painted my new build with sea salt in living room, mud room, hall, and master bed.

I think you've done an excellent job of choosing your wall color and would leave it as is. You might experiment with different pillows to see if another color or color combination would be more pleasing to you but I like the throw pillows you've chosen. You could add arm covers and throws across the back to minimize the orange that is visible, but the sofas themselves seem in great shape so going to the expense of having them recovered seems impractical.
Instead of regretting your great good fortune at having two really nice pieces of furniture given to you because the color would not have been your first choice, work on creating your choice of focus for the room.
Consider investing in three new tall thin base very striking matching lamps with exceptionally interesting white fabric lamp shades with uncommon finials that will create a new or at least shared focus for the rooms. Repurpose the undersized floor lamps to a bedroom corner.
If you ever decide to change out the end tables and coffee table, opt for a light finish wood rather than cherry. If there's room, you might swap the placement of the cabinet and sofa so both sofas are at right angles to each other sharing the different end table in the corner with the matching end tables on the outer ends.
