The blacksmith for fort Dawnguard, Gunmar is a master level Smithing trainer. He sells regular gear and Dawnguard gear and also sells you armored trolls to use as pets.
They have decent gold and carry a wide range of goods, including Skooma and Moon Sugar. If he is left alive, Gulum-Ei immediately becomes a fence for the Thieves Guild and has a decent amount of gold for selling stolen goods. Baldor is a Skaal blacksmith who calls Skaal Village his home. You can first find him working on the temple around the Wind Stone just outside of town until the Dragonborn uses the Bend Will shout on the stone.
Enthir is a merchant in the College of Winterhold with strong ties to the Thieves Guild. Most of what he sells involves magic, such as staves and robes, and he even acts as a fence for the Dragonborn. He is the master wizard-lord of House Telvanni and the master enchanting trainer said to be one of the oldest and most respected members of House Telvanni, so old that you can find him in The Elder Scrolls 3: Morrowind.
If you complete the restore the Thieves Guild to its former glory quests, all the fences will have gold to barter with. You can further boost this via investing and the speech perk for a total of per fence. There is a guy at the Riverwood trader who has gold once you invest with him. There are around named NPCs and they almost all are holding some personal gold, and may have some gold stored somewhere.
For extremely flexible opening hours, you can always count on the Khajiit caravans. The only challenge is actually finding one at the right time, but it's well worth the effort.
In particular, it's recommended to find either Ma'dran or Ri'saad, as they have the highest amounts of gold at their disposal. Both have on them. They're both general merchants. Ma'dran can usually be found somewhere between Solitude and Windhelm, as that particular caravan frequents both cities. Meanwhile, Ri'saad is likely to be either in Markarth or Whiterun. Perhaps most importantly, they can be approached at any time of the day.
If you have the Dawnguard DLC, it's good to know who to approach in the Dawnguard faction in order to sell all that useless junk. The local blacksmith, Gunmar, is the best guy to go to since he has the most money between the three merchants in Fort Dawnguard.
Better yet, Gunmar and the other merchant are available at any time of the day, so no need to monitor opening hours. Moreover, Gunmar has a whopping gold on him, so it's pretty easy to sell a bunch of weapons or ores to him for a good price. If you can't be bothered with joining the Dawnguard, and instead, fancy becoming an ally to the Volkihar clan, don't worry. They have an almost identical set up. The Volkihars also have three merchants at their castle, one of which is blacksmith Hestla.
Similarly to Gunmar, she has gold on her, which makes selling much easier. She's available at all times of the day makes sense for a vampire , so no need to worry about opening hours here either. The central location of Whiterun makes it one of the best places to go and trade things. Next time, make sure to drop by this location and speak with Elrindir, the shop owner.
Since the place is a tavern, it's open at all times, which makes trading with Elrindir very convenient. He's available all day and has gold on him.
It's not ideal, but his location and flexible times make up for not having gold on him. He's specialized in hunting gear in particular. If players are the proud owners of the Dragonborn DLC, one of the coolest and most flexible merchants in Neloth, the arrogant mage found in Tel Mithryn.
He specializes mostly in magic-related things when it comes to his own inventory, but what's particularly cool is that he has a ton of gold. Neloth has gold, which is well above the average amount that most merchants have. Moreover, for anyone traveling in Solstheim, it's a nice location to return to despite being on the extreme southwestern corner of the map.
It's well worth the trek, though. Solitude is one of the major cities in Skyrim, and as such, it's likely you'll spend quite a bit of time here or around the city doing various quests or just adventuring. Plus, it has the best house in the game, so knowing the city is a big advantage. Beirand is easily the best merchant in the city. As a blacksmith, he's subject to opening hours, from 8 a.
